Step one – type “notepad” into the start menu search
Step two – Open Notepad and paste this into it (Quotes as well): “C:\Program Files\Skype\Phone\Skype.exe” /shutdown
Step three – Save as.. Name it “skype shutdown.bat” (it’s important you have .bat on the end, the name is up to you though) and save it to your desktop
Step four – double click on it to completely close skype

I’m just a casual user, and mainly of the IM function so this bothers me too.
It’s a compromise, but… on Windows 7 if you “pin” it to the start menu, then it provides you with a quit option that is easily accessible from there.
It should just be an option in the main menu though, no doubt.
